This refreshing Kölsch captures the spirit of Mexicali, blending traditional German techniques with local inspiration. Utilizing a top-fermenting ale yeast at cooler lager temperatures, Cucapá 57 offers a clean, crisp profile with a delicate, slightly fruity edge. The significant inclusion of wheat provides a soft, grainy foundation reminiscent of fresh bread, complementing a light floral hop presence. Brilliantly clear and medium-gold in hue, it delivers a harmonious balance between mild malt sweetness and a gentle bitterness. The result is a highly sessionable, summer-focused beer that bridges the gap between the complexity of an ale and the snappy refreshment of a lager.
Appearance. Medium yellow to light gold (4 SRM). Brilliant clarity with a delicate, fine-beaded white head that offers moderate retention and light lacing.
Aroma. Clean and subtle intensity. Low grainy-sweet malt aroma with a faint bready note from the wheat. Very low fruity esters of green apple and pear. Subdued herbal and floral hop notes contribute to a fresh, balanced bouquet.
Taste. Initial impression is of soft, grainy maltiness with light bready undertones. Delicate fruitiness emerges mid-palate, suggestive of apple, without being overt. Low to medium-low bitterness provides balance against the malt. The finish is soft, dry, and remarkably clean, leaving a faint, pleasant herbal hop aftertaste.
