This Wild Specialty Beer is a vibrant exploration of tropical intensity, dominated by a lush and exotic passion fruit character. It opens with an explosive, tangy aroma of fresh passion fruit, supported by the funky, earthy undertones typical of a wild fermentation. On the palate, the sharp, refreshing acidity of the fruit takes center stage, seamlessly integrating with a light, crisp malt backbone. The wild yeast provides a subtle complexity, adding hints of hay and a delicate leather-like funk that balances the fruit’s natural tartness. It finishes remarkably dry and effervescent, leaving a lingering, zesty tropical impression that perfectly captures the essence of the exotic fruit.
Appearance. Pours a hazy, glowing deep gold to soft orange, reminiscent of fresh fruit juice. It is topped by a white, frothy head that dissipates relatively quickly, leaving a light ring of lacing.
Aroma. High intensity of fresh, acidic passion fruit dominates the nose. Beneath the fruit lies a moderate funky character including notes of wet hay and light earthy mustiness. Very low bready malt is present; no hop aroma.
Taste. Initial impression is a sharp, clean lactic sourness immediately followed by a wave of exotic passion fruit flavor. The fruit provides a natural tang without residual sweetness. Low bready malt flavor provides a brief foundation before transitioning into a bone-dry, acidic finish with a lingering tropical zest.
Mouthfeel. Medium-light body with a crisp, refreshing texture. Carbonation is high and prickly, enhancing the perception of dryness. A very light tannic astringency from the fruit adds structure without being harsh.
