This Wild Specialty Beer delivers a vibrant sensory experience centered on lush fruit integration. Intense aromas of zesty Mandarin orange peel and fleshy, tropical Papaya dominate the bouquet, supported by a clean, lactic acidity derived from a specialized yeast strain. The palate is defined by a tangy citrus tartness that cuts through the underlying sweetness of the tropical fruit, providing a refreshing but bold profile. Despite the 8% ABV, the finish remains remarkably clean and dry, allowing the natural character of the fruit to linger without being cloying. It balances a moderate acidity with a rich, fruity depth, resulting in a complex, multifaceted fruit sour.

Appearance. Deep gold to soft orange (8-12 SRM) with a distinct hazy glow. Pours with a moderate, off-white head that has fair retention but fades to a thin collar due to high acidity; minimal lacing.

Aroma. High intensity aromatics of fresh mandarin zest and ripe, musky papaya. A clean, sharp lactic tartness is prominent, lacking any funk or barnyard notes. Malt presence is very low, offering only a neutral, crackery backdrop.

Taste. Initial impression is a sharp, tangy citrus tartness. Rich flavors of mandarin juice and sweet papaya follow quickly. Hop bitterness is negligible (below 10 IBU). The specialized yeast provides a very clean fermentation profile, allowing the fruit to be the primary focus. The finish is dry and acidic with a lingering, refreshing citrus aftertaste.

Mouthfeel. Medium body with a slight silkiness likely enhanced by the papaya. Carbonation is moderate-high, providing a lively prickle that emphasizes the tartness. A gentle, well-integrated alcohol warmth is present but not hot.
