Chimay è un birrificio trappista con sede nell’omonima località della Vallonia, dove sorge l’Abbazia di Notre-Dame de Scourmont, edificata nel 1850 da alcuni monaci dell’Abbazia di Westvleteren, guidati dall’abate Jordain.
Le birre di Chimay sono stata tre la prime ad avere ricevuto il marchio ATP come Authentic Trappist Product e il birrificio è diventato uno dei due produttori trappisti più grandi del Belgio e nel mondo. Il monastero si impegna nella produzione di formaggi e di birre che garantiscono la sussistenza dei monaci, che interrompono la produzione in concomitanza con le due guerre del novecento.
Il secondo dopo guerra coincide con l’introduzione di nuove tecniche, l’ampliamento dell’impianto e l’isolamento del famoso lievito di Chimay, che caratterizza le cinque leggendarie birre prodotte dal birrificio trappista. Chimay rimane tuttora il marchio trappista più famoso e diffuso nel mondo.

A “Trappist” has to satisfy a number of strict criteria proper to this logo before it may bear this name:
The beer must be brewed within the walls of a Trappist monastery, either by the monks themselves or under their supervision.
The brewery must be of secondary importance within the monastery and it should witness to the business practices proper to a monastic way of life
The brewery is not intended to be a profit-making venture. The income covers the living expenses of the monks and the maintenance of the buildings and grounds. Whatever remains is donated to charity for social work and to help persons in need.
