This barrel-aged Saison presents a sophisticated blend of rustic farmhouse character and lush stone fruit. The maceration of Bergarouge apricots infuses the profile with vibrant notes of sun-ripened fruit and soft, skin-like tannins. An intricate fermentation profile offers spicy black pepper and soft earthy tones, complemented by a delicate oak presence from the maturation process. The underlying grain bill provides a soft, wheaty foundation that supports a refreshing acidity and a bone-dry finish. Effervescent and complex, it balances the bright, fleshy apricot character with the tart, wild nuances typical of a well-crafted barrel-aged assembly.
Appearance. Pale orange-gold with a warm amber glow (9 SRM). Pours with a dense, rocky ivory head that shows good retention and leaves delicate Belgian lacing. Unfiltered and moderately hazy due to fruit maceration.
Aroma. High intensity with dominant aromas of ripe Bergarouge apricot and yellow peach. This is layered over a spicy yeast profile of cracked black pepper and faint clove. Hints of toasted oak, vanilla, and a faint, lemony tartness are present, with low earthy hop notes and light, grainy malt.
Taste. Initial impression of tart apricot and fleshy stone fruit, transitioning into a spicy, phenolic yeast character. Hop flavor is low, allowing the fruit and barrel-derived tannins to provide structure. The malt is soft and cracker-like. High attenuation leads to a bone-dry, crisp finish with a lingering tart fruit aftertaste and a touch of woody dryness.
Mouthfeel. Medium-light body with very high, effervescent carbonation. Refreshingly crisp with a slight tannic astringency from the fruit skins and oak. Subtle, well-integrated alcohol warmth.
