This complex Saison showcases a masterful union of rustic farmhouse character and the vinous elegance of Savoie. The sensory profile is dominated by the distinct influence of Mondeuse grapes, imparted through twelve months of aging on lees and contact with Marc de Mondeuse. Aromatic layers of black pepper and spicy yeast phenolics intertwine with deep red berry and floral notes. On the palate, the beer is exceptionally dry and effervescent, featuring a grainy malt backbone that supports flavors of blackberry and earthy oak. The finish is firm and tannic, reflecting the extended barrel maturation and the skin contact from the grape pomace.
Appearance. Deep copper to ruby-amber (SRM 14-16) with a slight haze from the lees and lack of filtration. Pours with a dense, long-lasting ivory head that leaves persistent Belgian lace.
Aroma. High intensity with a complex blend of spicy black pepper yeast esters and vinous red fruit character. Distinct notes of blackberry, pomegranate, and floral hibiscus emerge from the Mondeuse influence, backed by a light grainy malt sweetness and a faint, earthy continental hop presence.
Taste. Highly attenuated and bone-dry. Initial flavors of tart red currants and peppery spice transition into a rustic, grainy palate. The bitterness is moderate but perceived as firm due to the dry finish and woody tannins from the Mondeuse barrels and Marc. Aftertaste is lingering and spicy with a subtle mineral quality.
Mouthfeel. Medium-light body with very high carbonation, creating a prickly, effervescent sensation on the tongue. Features a light tannic astringency from the grape skins and oak, with a subtle, well-integrated alcohol warmth.
