Underground Methods is a monumental Imperial Stout that showcases an intricate barrel-aging program. This collaboration delivers a multi-layered sensory experience, blending the spicy character of Balcones and Templeton Rye Whiskey with the earthy, grassy sweetness of 10-year Rhum Agricole and the bright, orchard-fruit essence of Laird's Apple Brandy. The addition of Comoros and Costa Rican vanilla beans provides a luxurious Nilla Wafer sweetness, perfectly complementing the core roast profile of chocolate-covered espresso beans. Dark, concentrated notes of black cherry jam emerge from the long maturation, resulting in a decadent, warming masterpiece that balances intense spirit complexity with a rich malt backbone.
Appearance. SRM 40+, jet black and completely opaque. Pours with a thin, dark tan head that dissipates quickly into a fine ring. High viscosity is evident by the heavy legs coating the glass.
Aroma. High intensity and extremely complex. Rich roasted malt scents of espresso and bittersweet chocolate are layered with prominent, creamy vanilla. Distinct barrel notes of spicy rye, oak tannins, and a hint of fruity apple brandy. Fermentation esters present as deep black cherry and dried figs.
Taste. Initial impression is a massive wave of dark chocolate and espresso bean roast. The mid-palate reveals sweet vanilla wafers and a concentrated black cherry jam fruitiness. Barrel character is profound, contributing peppery rye spice, earthy rhum notes, and charred oak. The finish is long and bittersweet, balancing malt depth with lingering spirit-derived warmth.
Mouthfeel. Very full-bodied, thick, and chewy with a luscious, velvety texture. Carbonation is low-moderate. Significant alcohol warmth is present, reflecting the 15.2% ABV, but remains smooth rather than sharp.
