Celestial Beerworks’ X-Wings is a monumental Imperial Stout, defined by an extraordinary thirty-month maturation in Four Roses bourbon barrels. This extended aging transforms the non-adjuncted base into a tapestry of crème brûlée and deep vanilla, underpinned by a robust, chocolatey stout malt character. The barrel influence is profound, contributing nuances of wildflower honey, rich caramel, and structured oak tannins that provide a sophisticated counterpoint to the beer’s inherent sweetness. Despite its formidable 16% ABV, the alcohol is expertly integrated, offering a gentle warmth that complements the bourbon’s presence. The result is a viscous, harmonious, and deeply complex sensory experience.

Appearance. SRM 40+; opaque jet black. A thin, dark tan head with low retention, exhibiting significant viscosity and prominent legs on the glass indicative of the high alcohol content.

Aroma. High intensity; layers of dark chocolate and roasted grain meld with intense bourbon, vanilla bean, and toasted oak. Secondary notes of caramel and wildflower honey emerge as the beer breathes, with low dark fruit esters resembling prunes.

Taste. Initial impression of rich crème brûlée and dark chocolate. The mid-palate reveals deep vanilla, wildflower honey, and charred oak. Moderate bitterness from roasted grain balances the residual sweetness. The finish is long and warming with lingering bourbon and structured wood tannins.

Mouthfeel. Full to very full-bodied; thick, chewy, and velvety. Low carbonation enhances the luscious, coating texture. Significant but smooth alcohol warmth is present and well-integrated.
