Lambic can be rightly considered the missing link between the worlds of wine and beer, and Saint Lamvinus takes this one step further by adding grapes normally intended for wine production. Intense, fruity beer that lingers on the palate and has a clear connection to its winemaking origins. Merlot is the iconic grape variety used for Bordeaux wines and the fruit we use to produce Saint Lamvinus is from the Côtes de Bourg area. Around eight weeks of soaking allows the lambic to extract all the tannins from the grapes. As in wine production, a good grape harvest will yield a beer with more body and character while a poorer harvest will result in less fruity Saint Lamvinus in which the presence of lambic is more pronounced. The use of grapes grown for wine means that Saint Lamvinus symbolises the link between the worlds of wine and beer. Given the success of this product we have over the past several years tried out many other combinations with our winemaking friends, most of whom have adopted a biodynamic and completely natural approach to agriculture. These very limited production batches are only available for tasting at the brewery. Pascal Delbeck, who back then was the steward of château Belair in Saint-Emilion, is the person who first thought of making this beer. In fact, the first two batches were produced in the Bordeaux region, and instead of us receiving the fruit at the brewery as is usually the case we sent two-year-old lambic to Saint-Emilion. Given how successful the beer was it became necessary to produce more, and for that reason production operations were transferred to the brewery. We have been working with Merlot grapes with the designation of origin Côtes de Bourg since 2000.
