Come vuole la tradizione è il risultato di Lambic di diverse annate miscelati insieme.
Si presenta di colore dorato carico, al naso ed al palato i sentori percepiti sono pungenti ed intensi, come vuole lo stile. L'aroma ed il gusto sono caratterizzati da note acidule e fruttate, con sentori di legno, cuoio e cantina in sottofondo. Al palato la bevuta è avvolgente e caratterizzata da note astringenti ed acidule che accompagnano il sorso fino al termine. Adatta all'invecchiamento.

Cantillon – Gueuze 100% Lambic Bio. Si abrimos la puerta de la rue Gheude 56 entraremos en una fábrica de cerveza en la que el tiempo parece congelado desde el año 1900. Momento en el que la familia Van Roy-Cantillon fundó Cantillon . Actualmente una de los estandartes del estilo y el movimiento Lambic en Bruselas. En ella veremos los mismos contenedores de cobre rojo, barriles de más de 100 años y paredes de botellas. Como dice Jean-Pierre, ha vivido muchos momentos, pero si le llegan a decir hace 30 años que habría que pedir cita para poder visitar su fábrica, posiblemente hubiera soltado una estridente carcajada. Las cervezas Lambic fueron prácticamente olvidadas casi durante todo el siglo XX. Hasta que el movimiento craft las volvió a poner en el lugar que se merecían.

Esta auténtica Gueuze ha sido elaborada por la respetando los métodos ancestrales. Es el resultado de un ensamblaje de lambics de uno, dos y tres años. Beber esta cerveza es todo un viaje organoléptico. En el paladar es compleja y múltiple, se combinan los sabores a madera y afrutados a manzana o limón, con una potente intensidad y una agradable acidez. Aromaticamente se entreveran los cítricos con la fruta de hueso y el, inconfundible pero difícil de describir, olor del brett fino.

Recomendamos adentrarse en el mundo de las cervezas de fermentación espontánea con esta Cantillon . Cantillon – Gueuze 100% Lambic Bio es una experiencia a caballo entre la cerveza tradicional y, en cierta forma, el vino natural. Además, maridan excepcionalmente tanto con carne como con pescado, así como con quesos u otros alimentos grasos.

El resultado, magistral, hace de esta cerveza una de las más emblemáticas de Bruselas.
Esta Gueuze ostenta un bonito color dorado, ligeramente anaranjado. La espuma es muy ligera y poco intensa. En nariz, es evidente que estamos ante una gran cerveza: se perciben aromas cítricos, sobre todo el del limón, que se entremezclan con otras notas afrutadas como el albaricoque y la manzana. En boca, las sensaciones son múltiples: Presenta unos sabores afrutados a manzana y limón, que destacan por su agradable acidez. La intensidad de esta cerveza es admirable.
