Caleya Pêche Noir is a decadent Imperial Stout that commands attention with its profound complexity. Ten months in whisky casks impart deep, spirit-forward notes of charred oak and vanilla, which intertwine seamlessly with the intense, bittersweet darkness of cocoa nibs. The beer pours with an imposing presence, offering an olfactory journey through layers of roasted malt, dark chocolate, and a distinct peaty warmth. On the palate, the high alcohol content provides a luxurious velvety texture, while the interplay of roasted grains and wood-derived tannins from the barrel creates a lingering, sophisticated finish. This is a bold, meditative experience designed for slow appreciation.

Appearance. Jet black and opaque (SRM 40+). Pours with a thick, dense, mocha-colored head that shows moderate retention and leaves oily legs on the glass.

Aroma. High intensity aroma of bittersweet chocolate and Dutch-process cocoa. Prominent notes of whisky, toasted oak, and vanilla follow, supported by a rich base of roasted coffee, burnt sugar, and subtle dark fruit esters like raisin.

Taste. Rich and layered initial impression of dark chocolate and espresso. The cocoa nibs provide a mid-palate earthy bitterness that balances the residual malt sweetness. Significant whisky character emerges with notes of caramel and wood spice. Hop flavor is very low, but the bitterness is medium-high, driven by roasted grains and oak tannins. The finish is long and warming with a lingering bittersweet cocoa aftertaste.

Mouthfeel. Full-bodied and viscous with a silky, coating creaminess. Carbonation is low to moderate. A significant but smooth alcohol warmth is present, and a light tannic astringency from the oak adds structure.
