This Dunkles Bock presents a sophisticated interplay between traditional German brewing and American oak conditioning. A base of Munich and Pilsen malts provides a deeply toasty, bready foundation, while a restrained addition of smoked malt adds a whisper of savory complexity. The low-temperature fermentation ensures a remarkably clean profile, allowing the influence of the American oak to shine through with hints of vanilla and subtle wood tannins. With a 6.7% ABV, it offers a gentle, well-integrated warmth that complements the rich Maillard notes. The resulting lager is a harmonious blend of malt-driven sweetness and refined barrel-matured character.
Appearance. Deep copper to dark brown with brilliant clarity and attractive garnet highlights. Crowning the pour is a large, creamy, persistent off-white head that leaves delicate lacing.
Aroma. Moderate to high intensity of rich, bready Munich malt and Maillard-driven toastiness. The profile is exceptionally clean with no yeast esters. Distinctive notes of vanilla and subtle wood-driven coconut from the American oak mingle with a very low, refined smoky undertone. No hop aroma is detected.
Taste. The initial impression is a complex, rich maltiness dominated by toasty Maillard products and bready crust. Mid-palate reveals the influence of American oak, contributing a hint of vanilla and dry wood character. A subtle smokiness persists in the background without being phenolic. Bitterness is low, serving only to balance the malt sweetness. The finish is clean and well-attenuated, leaving a lingering toasty-malt and oak aftertaste.
Mouthfeel. Medium-full bodied with a smooth, velvety texture. Carbonation is moderate. A light, pleasant alcohol warmth is present, reflecting its strength. No harshness or significant astringency, despite the wood conditioning.
