Ca' del Brado Nessun Dorma

A vintage saison brewed with unmalted wheat and oats, delicately hopped with noble hop variants.

Following a primary fermentation with Saccharomyces in stainless steel, the beer is further aged in oak barrels for 6-8 months with Brettanomyces yeast and bacteria (lactobaccillus and pediococcus).

The result was then blended with a small amount of fresh saison, to add freshness, elegance and body.

This beer is complex and rustic with fine carbonation. Notes of citrus, spice and white fruit are complemented by floral hints and oak character.
