This Saison presents a sophisticated marriage of traditional farmhouse character and wild meadow botanicals. Aged for 24 months in fresh Chardonnay barrels, it exudes elegant white wine vinous notes and subtle oak tannins. The fermentation profile, enhanced by brewery-harvested Dandelion and Nettle, offers a unique layer of earthy, herbal complexity that complements the spicy Belgian yeast. Expect a bright, highly attenuated body that highlights floral nuances and a dry, sophisticated finish. The integration of barrel and botany elevates the rustic grain base, resulting in a complex, refreshing ale that balances orchard fruit esters with a distinctively wild, foragers' edge.
Appearance. Pours a hazy, pale gold with a dense, persistent ivory head that leaves delicate Belgian lace. Effervescent with fine bubbles.
Aroma. High intensity. A complex bouquet of white wine grapes and soft oak from the Chardonnay barrels merges with floral dandelion and earthy, tea-like nettle. Traditional yeast provides moderate peppery spice and citrusy esters. A faint, rustic graininess resides in the background.
Taste. Initial impressions of Chardonnay-driven vinous notes and subtle oak tannins are followed by distinct herbal nettle and floral dandelion flavors. The malt provides a soft, grainy foundation. Finishes very dry and crisp with a lingering, earthy bitterness and a hint of white pepper spice.
Mouthfeel. Medium-light body with high, effervescent carbonation. A very light alcohol warmth is present, complemented by a slight tannic dryness from the long barrel aging, enhancing the highly attenuated finish.
