Coolship 3 – Burning Sky Brewery
Continuing our journey into spontaneous fermentation, this release is a blend of 1, 2 and 3-year-old beers. We use a traditional turbid mash schedule followed by an extended boil and wild inoculation overnight in our coolship before transferring to barrels for a lengthy fermentation. Oaky, with a pleasing acidity, this beer is unique to our landscape.
“Whilst industrial units are convenient, they seldom inspire, so we chose to locate ourselves within the beautiful and inspirational South Downs, occupying refurbished farm buildings in a slightly quirky village. A true farmhouse brewery.”
