Brussels Beer Project

This Specialty IPA serves as a tropical bridge between Belgian tradition and modern hopping, functioning as a hybrid Belgian IPA and Saison. Intense aromatics of lychee and passion fruit are driven by the expressive use of Citra and Mosaic hops, while Challenger and Smaragd provide a foundational earthy and herbal complexity. The fermentation character of the Saison yeast is prominent, contributing a distinct peppery spice and dry finish. A lean barley malt profile supports the high bitterness without adding heavy sweetness, resulting in a refreshing, hop-forward profile that remains quintessentially Brussels in its spicy, ester-driven complexity.

Appearance. Deep gold to light amber (6-10 SRM). Tall, persistent white head with excellent lacing. Slight haze present due to the yeast strain and heavy dry-hopping.

Aroma. High intensity hop aroma featuring passion fruit, lychee, and citrus. Moderate spicy, peppery phenols and light fruity esters like pear from the Saison yeast. Low bready and grainy malt character.

Taste. Initial burst of tropical fruit and citrus hop flavors. High bitterness (50-70 IBU context) that is firm but not harsh. Significant peppery fermentation character balances the hop oils. Very low malt sweetness with a grainy edge. Finish is bone-dry and crisp with a lingering spicy and bitter aftertaste.

Mouthfeel. Medium-light body with a high, effervescent carbonation level. Smooth texture with a light carbonic prickle. Subtle alcohol warmth is well-integrated.
