This Belgian IPA presents a sophisticated fusion of traditional European fermentation and contemporary New World aromatics. Australian hops deliver a vibrant, exotic profile characterized by tropical fruit and citrus, which harmonizes with the expressive, fruity esters typical of Belgian yeast strains. A base of pale malts provides a supportive sweetness, balancing the intensity of the hop-forward character without overwhelming the palate. Despite its complex layers of spice and stone fruit, the beer maintains a moderate bitterness and a crisp, well-attenuated finish. Behemoth Sacrum excels as a Specialty IPA, offering a bright, assertive, and highly aromatic sensory experience that bridges the gap between old-world complexity and modern hop intensity.
Appearance. Deep gold to light amber (6–8 SRM). Large, creamy white head with excellent retention and thick lacing. Clear to a very slight haze from heavy dry-hopping.
Aroma. High intensity hop aroma featuring tropical fruit, passionfruit, and melon from Australian hops. Moderate fruity esters of pear and red apple are complemented by a light peppery phenol. Low grainy-sweet malt character.
Taste. Initial burst of tropical fruit and citrus hop flavor. The mid-palate reveals spicy Belgian yeast character and a touch of honey-like malt sweetness. Moderate bitterness that is firm but smooth. Finishes dry and clean with lingering notes of exotic fruit and a soft peppery spice.
Mouthfeel. Medium body with moderate-high carbonation that provides a lively, effervescent mouth-scrubbing effect. Smooth texture with very light, well-integrated alcohol warmth.
