Doorsnee, ‘saaie’ of matig gebrouwen bieren zijn er al genoeg. De ware bierliefhebber heeft behoefte aan verrassende IPA’s, stouts en porters met gedurfde smaken, of aparte seizoensbieren, maar dan wel van de best mogelijke en meest constante kwaliteit. Zie hier in het kort de filosofie van Kees Bubberman, eigenaar van Brouwerij Kees! in Middelburg.

Toegankelijk smakende bieren, maar wel met een twist, iets aparts, dat is zijn idee. Kees Bubberman startte zijn professionele brouwcarrière bij Brouwerij Emelisse in het Zeeuwse Kamperland. Hij was toen al jarenlang een meer dan verdienstelijk hobby-bierbrouwer. Opgeleid en op dat moment werkzaam als horecakok zag hij een unieke kans. Al binnen enkele jaren groeide Emelisse uit van een vooral op toeristen en bierbrouwers in de regio gerichte brouwerij tot een craft beer brewery van internationale faam. Tientallen vooral op Britse en Amerikaanse leest geschoeide en gedurfde IPA’s, zware porters, coffee stouts, winterbieren en saisons verlieten de brouwerij.

Wereldbieren

Toch besloot Kees Bubberman na een aantal jaren dat het tijd werd om op eigen benen te staan. Een aantal grote en kleine investeerders uit binnen- en buitenland bleek graag bereid hem te helpen zijn droom te verwezenlijken en begin 2015 opende hij in thuisstad Middelburg Brouwerij Kees! Nog geen jaar later werd hij tot vierde beste nieuwe brouwer wereldwijd verkozen door de toonaangevende craft beer-liefhebbers site Ratebeer.com. Wat je noemt een vliegende start! In 2017 stond brouwerij Kees weer hoog in de wereldwijde top 100 van Ratebeer.com. Nu, drie jaar na de oprichting, vinden de bieren uit Middelburg hun weg de wereld in, tot aan de Verenigde Staten, China, Rusland en Australië aan toe.

Bier in blik

Voorjaar 2018 schakelt Brouwerij Kees! over op een zogeheten canning line. Ambachtelijk bieren behouden hun verfijnde aroma’s en (hop-)smaken beter in blik. Licht, lucht, warmte en tijd zijn de grootste vijanden van bier, zo blijkt uit onderzoek. Zeker bij IPA’s is licht uit den boze, vindt Kees Bubberman. De smaken moeten optimaal bewaard blijven. De bieren van Kees! zijn net wat anders dan die van andere brouwers en daarom vragen ze om de best mogelijke verpakking. In echte craft beer-landen als Groot-Brittannië en de VS is blik al sterk in opkomst als verpakking en de rest van de wereld volgt.
