Brouwerij Boon Oude Geuze Boon (2020-2021)
This Oude Geuze presents a masterfully balanced sensory profile, bridging sharp acidity with deep, oak-aged complexity. The aroma leads with a moderate funk, offering notes of wet hay, leather, and aged wood, characteristic of the older lambic components in the blend. On the palate, a vibrant citrus brightness reminiscent of grapefruit and Muscat grapes melds with a subtle ginger spice. The blend of various ages provides a structured, wholehearted body that avoids wateriness, while the secondary fermentation in the bottle ensures a lively, mousse-like effervescence. It concludes with a dry, sublime finish where tart fruit and earthy barnyard notes linger gracefully with sophisticated refinement.
Appearance. Golden color (5–6 SRM) with brilliant clarity and a thick, rocky, mousse-like white head with exceptional retention and lacing.
Aroma. Moderate to high intensity featuring complex funk (leather, barnyard, hay) balanced by fruity esters of grapefruit, citrus rind, and Muscat grapes. Low bready wheat malt supports the profile with a hint of aged oak; no hop aroma is present.
Taste. Initial impression is sharply tart and refreshing, evolving into layers of funk and fruit including grapefruit and ginger. Low bready malt flavor provides a brief foundation before being overtaken by lactic sourness. Bitterness is non-existent, as the balance is driven by acidity. The finish is bone-dry and crisp with a lingering tartness.
Mouthfeel. Medium body with a wholehearted, velvety texture; highly carbonated and effervescent. Features a moderate tart, puckering quality and a very light, well-integrated alcohol warmth without astringency.

It’s a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the “best before” date!Taste carefully and you will uncover a fruity grapefruit and ginger flavour with a hint of Muscat grapes.
