‘Terf’ first saw the light of day in July 2020. This local wheat beer was brewed
by Brussels-based Brasserie de la Senne using old wheat varieties from the cereal collective of Brouwerij 3 Fonteinen from Beersel in Brabant. Part of the brew
was immediately drawn onto small bottles and sold out immediately. Another part
of the brew matured further for three years in oak lambic barrels. In November
2023, this ‘matured’ Terf was lit with young 3 Fountains lambic, in a
55/45 ratio. This Wild Terf is the fruit of collaboration between brewers and farmer(s) around Pajot landraces and with a fair income for the farmer. Above all, it is an ode to the historical agricultural link between the Brabant countryside and Brussels.

Dit lokaal tarwebier werd gebrouwen door Brasserie de la Senne uit Brussel met oude tarwerassen uit het granennetwerk van Brouwerij 3 Fonteinen uit het Brabantse Beersel. Een deel van het brouwsel werd meteen op kleine flesjes getrokken en was meteen uitverkocht. Een ander deel van het brouwsel rijpte drie jaar verder op eikenhouten lambikvaten. In november 2023 werd deze ‘gerijpte’ Terf aangestoken met jonge 3 Fonteinen-lambik, in een 55/45 verhouding. Deze Wilde Terf is de vrucht van de samenwerking tussen brouwers en boer(inn)en rond Pajotse landrassen en met een eerlijk inkomen voor de landbouw(st)er.

NL - Het Wilde Terf en Druiven Pakket In juli 2020 zag onze Terf (lokaal dialect voor 'tarwe') voor het eerst het licht. De eerste batch van dit lokaal tarwebier werd toen voor ons gebrouwen door Brasserie de la Senne uit Brussel met oude tarwerassen uit het granennetwerk van Brouwerij 3 Fonteinen uit het Brabantse Beersel. Een deel van het brouwsel werd op 33cl-flesjes getrokken, verkocht als ‘Terf’, en was in een mum van tijd uitverkocht. Een ander deel van het brouwsel rijpte in onze vatenzaal maar liefst drie jaar verder op eikenhouten lambikvaten. In november 2023 werd deze ‘gerijpte’ Terf aangestoken met jonge 3 Fonteinen-lambik, in een 55/45 verhouding. Deze Wilde Terf is de vrucht van de samenwerking tussen brouwers en boer(inn)en rond Pajotse landrassen en met een eerlijk inkomen voor de landbouw(st)er. Het is bovenal een ode aan de historische agrarische band tussen het Brabantse land en Brussel. Dit pakket bevat drie 750ml-flessen van onze Wilde Terf, die een oplage heeft van een kleine 2500 flessen. Een nog kleiner deel werd op 375ml-flessen getrokken.

Verder bevat dit pakket twee flessen van onze Pinot Noir. Hiervoor macereerden we de hele Pinot Noir druiven gedurende meer dan negen maanden voordat ze werden geblended en gebotteld. We hebben meer dan 60% oude lambik gebruikt, waardoor de gewogen gemiddelde leeftijd van deze blend op het moment van bottelen ruim 28 maanden bedraagt. De uiteindelijke fruitintensiteit van deze blend is 425 gram Pinot Noir-druiven per liter, dat is 320 gram in deze fles. Voor de druiven werkten we andermaal samen met onze vrienden van Harth+Harth, een biodynamische, Demeter-gecertificeerde natuurlijke wijnmaker uit Rheinhessen, Duitsland. De helft van de granen waarmee de oorspronkelijke zeven lambikken werden gebrouwen, kwam uit het Pajottenland.

De zesde fles in dit pakket is een samenwerking met een schone regio in Frankrijk, Beaujolais. Hiervoor ontsteelden we hele Gamay-druiven van Alex Foillard en marcereerden we deze kort op een eikenhouten vat met drie jaar oude lambik. Vervolgens hebben we voor het bottelen nog wat jonge lambik toegevoegd. De gewogen gemiddelde leeftijd bedraagt ​​ruim 12 maanden en de uiteindelijke fruitintensiteit bedraagt ​​384 gram per liter. Alle granen die in de zeven verschillende gebruikte lambikken worden gebruikt, zijn afkomstig uit het Pajottenland. Deze kleine batch Gamay (523 flessen) is één van de drie technieken die we toepasten op dezelfde oogst druiven die we van Alex ontvingen. De andere twee zullen - als de flesrijping goed verloopt - in de loop van 2025 gereleaset worden.

Dankzij onze grote, schone bibliotheek van (uitsluitend) flessen kunnen we steeds putten uit een uitgebreide selectie van telkens unieke lambikassemblages. Daarom lanceren we, enkel via onze webshop, graag al eens nieuwe pakketten met zowel geliefde klassiekers als meer beperkte flessen.

EN - The Wilde Terf and Grapes Pack In July 2020, our Terf (local dialect for 'wheat') was born for the first time. The first batch of this local wheat beer was back then brewed for us by Brasserie de la Senne from Brussels with old wheat varieties from the cereal network of Brouwerij 3 Fonteinen from Beersel in Brabant. Some of the brew was bottled into 33cl bottles, sold as 'Terf', and sold out in no time. Another part of the brew matured in our barrel room for no less than three years in oak lambik barrels. In November 2023, this 'matured' Terf was blended with young 3 Fonteinen lambik, in a 55/45 ratio. This Wilde Terf is the fruit of the collaboration between brewers and farmers around Pajot landraces and with a fair income for the farmer. Above all, it is an ode to the historical agricultural bond between Brabant and Brussels. This package contains three 750ml bottles of our Wilde Terf, which is limited to just under 2,500 bottles. An even smaller run was bottled on 375ml-bottles.

Furthermore, this package contains two bottles of our Pinot Noir. For this, we macerated the whole Pinot Noir grapes for over nine months before blending and bottling. We have used more than 60% old lambik, which means the weighted average age of this blend at the time of bottling is over 28 months. The final fruit intensity of this blend is 425 grams of Pinot Noir grapes per liter, which is 320 grams in this bottle. For the grapes, we once again collaborated with our friends from Harth+Harth, a biodynamic, Demeter-certified natural winemaker from Rheinhessen, Germany. Half of the grains used to brew the original seven lambikken came from the Pajottenland.

The sixth bottle in this package is a collaboration with a beautiful region in France, Beaujolais. To do this, we destemmed whole Gamay grapes from Alex Foillard and briefly macerated them in an oak barrel with three-year-old lambik. We then added some young lambik before bottling. The weighted average age is over 12 months and the final fruit intensity is 384 grams per liter. All grains used in the seven different lambikken used come from the Pajottenland. This small batch of Gamay (523 bottles) is one of three techniques we applied to the same harvest of grapes we received from Alex. The other two will be -if the bottle conditioning - released in 2025.

Thanks to our large beautiful bottle(-only) library, we can always select unique lambic blends from a vast selection. That is why, now and then, we release, only through our webshop, new packs with both beloved classics as well as more limited bottles.

¡ÈTerf¡É was first brewed in July 2020. This local wheat beer was concocted by Brussels-based Brasserie de la Senne using old wheat varieties from the cereal collective of 3 Fonteinen Brewery. Part of the brew was immediatly drawn onto small bottles and sold out in no time. Another part of the brew matured further for three years in oak lambic barrels. In November 2023, this ¡Æmatured¡Ç Terf was mixed with young lambic to get the fermentation starting again. The beer that was thus created was called ¡ÈWild Terf¡É and is the fruit of collaboration between brewers and local farmers, with a fair income for the farmer. Above all, it is an ode to the historical agricultural link between the countryside and Brussels.
