Voor deze vierde blend in de eerste serie van volledig biologische Oude Geuze Cuvée Armand & Gaston, hebben we één-, twee- en driejarige lambikken gemengd die afkomstig zijn van dertien verschillende brouwsels uit vier verschillende vaten en foeders. Voor het bottelen hebben we wat biologische kastanjebloemhoning toegevoegd. Alle granen die in deze brouwsels zijn gebruikt, komen uit het Pajottenland en ons granennetwerk. 36% van de granen zijn erfgoedlandrassen. Iets minder dan de helft van de blend bestaat uit jonge lambik, de rest van de blend is samengesteld uit oude lambikken. De resulterende gewogen gemiddelde leeftijd bij het bottelen is meer dan 22 maanden.

EN - Cuvée Armand & Gaston Blend 29

For this fourth blend in the first series of fulyy organic Oude Geuze Cuvée Armand & Gaston, we blended one-, two- and three-year old lambikken originating from four different barrels and foudres and about thirteen different brews. While blending, we added some organic chestnut flower honey. all cereals used in these brews originate from Pajottenland from whitin our cereal collective, and 36% of the grains are heirloom land races. a tad less than half of the blend consists of jonge lambik, the rest of the blend is made up of old lambikken. the resulting weighted average age upon bottling is more than 22 months.

Cuvée Armand & Gaston is a blend of one-, two- and at least three-year old 3 Fonteinen lambics. Spontaneously fermented. Matured in oak barrels. Extended bottle ageing.
Unfiltered. Unpasteurised. 

As 3 Fonteinen have a long lambic cycle, sometimes they add some sugar or “liqueur” to the blend to make sure that the active wild yeast continues its work in the bottle. The aim is not to sweeten the geuze blend.

This Cuvée Armand & Gaston is part of a series of three blends that are the same, but where the proportion of added wort slightly differs. This blend consists of more than 70% two-year old and 20% three-year old lambic and 10% jonge lambic. Blend 89 received a tad less lambic wort, and blend 91 received a bit more lambic wort during bottling.
