Le Bal Trinque presents as a quintessentially refreshing Saison, capturing the collaborative spirit of the Lille beer scene. This farmhouse ale leads with a vibrant bouquet of spicy black pepper and citrusy esters, underpinned by a rustic, grainy malt backbone. The profile is driven by traditional continental hops, offering earthy and floral nuances that complement the yeast-forward character. On the palate, it is exceptionally dry and highly attenuated, featuring a firm but integrated bitterness. Its effervescent nature and crisp finish make for a sophisticated, highly drinkable ale that balances Belgian yeast complexity with a clean, modern approach to the style.
Appearance. Deep gold to pale orange (approx. 6–8 SRM). Topped by a voluminous, dense, and rocky white head with excellent retention and significant Belgian lacing. Unfiltered with a slight, characteristic haze; highly effervescent with visible rising bubbles.
Aroma. High intensity with a complex interplay of fruity esters and spicy phenols. Notes of lemon zest, green apple, and a hint of pear are prominent, followed by a distinct cracked black pepper spiciness. Hop aroma is moderate, displaying earthy, floral, and slightly herbal continental traits. Malt is low but provides a clean, grainy, and slightly sweet cracker-like base.
Taste. The initial impression is crisp and highly refreshing. Grainy, rustic malt flavors provide a soft palate that is quickly overtaken by fruity yeast esters of citrus and pome fruit. A moderate to high bitterness provides structure, accented by peppery and herbal hop flavors. The finish is remarkably dry—almost bone-dry—with a lingering, spicy aftertaste and no residual sweetness.
Mouthfeel. Medium-light body with a very high, effervescent carbonation that creates a prickly, lively sensation on the tongue. Alcohol warmth is very subtle and well-integrated at 6% ABV. No astringency; smooth despite the high attenuation.
