This celebratory Imperial Stout presents an immense sensory landscape, shaped by eleven years of brewing heritage and extensive aging in rye barrels. The aroma is a decadent collision of bittersweet chocolate, espresso, and spicy grain, with deep notes of black cherry and raisin. On the palate, the sheer 17% ABV provides a significant, smooth warmth that carries flavors of toasted oak, vanilla, and the peppery bite characteristic of the rye casks. Appearance. Jet black and opaque (40+ SRM). Pours with a dense, dark brown head that shows moderate retention. High viscosity is evident through prominent legs on the glass when swirled.
Aroma. High intensity with a complex blend of bittersweet chocolate, heavily roasted coffee, and molasses. Prominent spicy rye and toasted oak notes from the barrel aging intermingle with dark fruit esters of prune and raisin. A clean but powerful alcohol warmth is noticeable.
Taste. Intense initial impression of dark cocoa and charred grain. The mid-palate reveals layers of black licorice, dried figs, and a sharp peppery spice from the rye barrels. High bitterness (approx. 90 IBU context) provides a necessary counterpoint to the massive malt sweetness. The finish is long and warming with lingering notes of espresso and vanilla.
Mouthfeel. Very full-bodied and chewy with a thick, velvety, and luscious texture. Carbonation is low. Significant, smooth alcohol warmth is present throughout, consistent with its high gravity.
