Sweet Stout 15 º
This Imperial Stout is an opulent sensory experience, delivering an intense aromatic profile dominated by toasted coconut and the spicy, floral character of tonka beans. The influence of Plantation rum barrel aging is immediate, weaving notes of molasses and oak through a dense tapestry of dark cacao and creamy vanilla. On the palate, the addition of honeycomb provides a rich, floral sweetness that softens the deep roasted malt core of espresso and bittersweet chocolate. It is a harmonious, dessert-like beer where the 15% ABV manifests as a smooth, integrated warmth rather than a sharp heat, culminating in a long, velvety finish.
Appearance. Jet black and completely opaque (40+ SRM). It forms a thick, dense, deep tan head with moderate retention. Due to its high viscosity and alcohol content, prominent legs are visible on the glass when swirled.
Aroma. High intensity with a complex blend of bittersweet chocolate, dark roasted coffee, and spicy Plantation rum. Pronounced layers of toasted coconut, nutty tonka, and vanilla are supported by subtle dark fruit esters of prune and raisin. Hop aroma is absent, overshadowed by rich wood-derived notes.
Taste. The initial impression is intensely sweet and decadent, featuring honeycomb and milk chocolate. Mid-palate reveals deep roasted grains and burnt sugar balanced by the earthy spice of tonka and cacao. Bitterness is low to moderate, serving only to prevent the thick malt base from being cloying. The finish is long and lingering, rich with coconut and rum-soaked oak.
Mouthfeel. Extremely full-bodied, chewy, and viscous with a velvety, luscious texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present throughout, enhancing the beer's richness without any solvent-like harshness.
