This Imperial Stout offers a decadent sensory journey inspired by the Scottish macaroon bar. Intensely aromatic, it leads with a heavy veil of toasted coconut and rich cocoa nibs, supported by a backbone of chocolatey malt. The experience is deeply indulgent, evoking notes of sugary fondant and dark chocolate. On the palate, the sweetness of the coconut harmonizes with the roasted depths of the malt, creating a complex, dessert-like profile. Bold and viscous, it balances the sweetness with a gentle alcohol warmth and a lingering cocoa finish, capturing the essence of a confectionery treat within a robust, dark ale framework.
Appearance. Jet black and completely opaque (35-40 SRM). Pours with a dense, persistent dark tan head that leaves significant lacing on the glass. High viscosity is apparent through thick legs when swirled.
Aroma. High intensity. Dominant aromas of toasted coconut and dark chocolate from the cocoa nibs take center stage. Beneath the adjuncts lies a rich malt profile of roasted coffee, burnt grain, and light caramel. Very low hop aroma, with subtle dark fruit esters like raisins and prunes. A noticeable but smooth alcohol presence complements the sweet, fondant-like scent.
Taste. Initial impression is intensely sweet and chocolate-forward, followed immediately by prominent toasted coconut. The chocolatey malt provides a sturdy base of bittersweet cocoa and espresso. Bitterness is moderate, sufficient to balance the residual sweetness of the fondant character without becoming harsh. The finish is lingering and sweet, with a velvety aftertaste of coconut and dark chocolate.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is low to moderate, enhancing the creamy profile. A gentle, smooth alcohol warmth is present, consistent with its 8.4% strength, but well-integrated into the thick body.
