This sophisticated Straight Sour Beer represents a masterful blend of spontaneous and farmhouse ales aged in neutral oak for up to two years. The sensory profile is defined by a sharp, clean lactic acidity layered with the bright, zesty character of calamansi. Aged Cascade hops contribute nuanced aromas of dried apricot and subtle spice, rather than traditional bitterness. The malt base provides a delicate biscuity backdrop that yields to the complexity of the wood-matured batches. Expect an effervescent, dry finish where citrus rind and a whisper of oak tannin linger, showcasing the elegance of long-term fermentation and thoughtful blending.
Appearance. Pale straw to light gold (2–3 SRM). Clear to slightly hazy due to the blend of aged farmhouse components. Large white head with low retention and fine lacing; highly effervescent.
Aroma. High intensity. Dominant sharp lactic sourness integrated with pungent calamansi citrus and lemon. Notable secondary notes of dried apricot and floral spice from the aged Cascade hops. Low bready, crackery malt and a subtle neutral oak woodiness.
Taste. Initial impression is a bold, clean lactic sourness. Flavors of bright calamansi citrus rind and tart apricot dominate the mid-palate, supported by a faint biscuity malt foundation. Hop bitterness is undetectable. The finish is bone-dry and crisp, with a lingering tartness and a delicate touch of oak tannin.
Mouthfeel. Light body with high, prickly carbonation. Crisp acidity provides a refreshing, mouth-watering sensation. Subtle alcohol warmth is well-integrated and smooth. No astringency.
