This 2023 vintage Straight Sour Beer captures the rustic elegance of spontaneous fermentation combined with the distinctive character of Savagnin pomace from the Jura. On the palate, a sharp lactic acidity intertwines with the vinous complexity of the Savagnin grapes, offering notes of tart green apple, lemon zest, and a subtle nutty undertone characteristic of the variety. The barrel aging lends a structured, bone-dry finish with faint oak tannins. Supported by a delicate pale malt backbone of biscuit and cracker, the beer remains exceptionally refreshing and effervescent. The interplay between the wild fermentation and the pomace maceration results in a bright, sophisticated, and deeply evocative sensory experience.
Appearance. Pale straw to light gold (3–5 SRM). Hazy to somewhat opaque due to maceration and spontaneous fermentation. Features a large, white head with moderate to poor retention and high effervescence.
Aroma. High intensity of sharp, clean lactic sourness. Dominant fruity character of tart green apple and citrus lemon, bolstered by the vinous, floral, and slightly nutty aromatics of the Savagnin pomace. Pale malt provides a subtle biscuity background. No hop aroma.
Taste. A powerful initial impression of clean lactic sourness. Mid-palate reveals complex grape skin flavors, tart apple, and a hint of mineral white wine. Malt is restrained, showing as soft cracker or grainy notes. Bitterness is undetectable. The finish is bone-dry and crisp with a lingering vinous aftertaste.
Mouthfeel. Light body with high carbonation that creates a prickly, refreshing sensation. Notable crisp acidity. A light, well-integrated alcohol warmth is present, complemented by a faint tannic grip from the grape skins and barrel aging.
