This Imperial Stout offers a decadent sensory journey, defined by its maturation in cherry bitters barrels formerly holding Woodford Reserve bourbon. The nose is a rich tapestry of bittersweet chocolate and espresso, interlaced with aromatic cherry, toasted oak, and a spicy botanical edge from the bitters. On the palate, deep roasted grains provide a sturdy foundation for layers of dark fruit, vanilla, and caramel. The influence of the Woodford Reserve barrel provides a sophisticated bourbon warmth that melds with a lingering, velvety finish. Intentionally low carbonation enhances the viscous, chewy texture, allowing the complex barrel-aged nuances to shine.
Appearance. Jet black and opaque (SRM 40+). Pours with a thin, dark tan head that recedes quickly to a persistent collar, leaving oily legs on the glass indicative of its 11% strength and barrel treatment.
Aroma. Intense and multifaceted; dominant notes of dark chocolate, black licorice, and roasted coffee beans. The cherry bitters barrel contributes a distinct tart fruitiness and herbal spice, complemented by Woodford Reserve signature vanilla, oak, and toasted coconut aromas.
Taste. A bold initial impression of charred malt and cocoa. Mid-palate reveals complex esters of dried plums and black currants alongside the sharp, botanical character of cherry bitters. Woodford Reserve bourbon notes provide a smooth caramel sweetness that balances a firm, hop-derived bitterness. The finish is long, warming, and bittersweet with a touch of wood tannin.
Mouthfeel. Full-bodied and exceptionally viscous with a luscious, velvety mouthfeel. Carbonation is purposefully low, minimizing prickle to emphasize the beer's weight. Significant but smooth alcohol warmth provides a comforting glow without being solventy.
