This Belgian Dark Strong Ale presents a masterfully layered profile born from a blend of dark ales aged in Heaven Hill bourbon barrels for over a year. The sensory experience opens with an opulent tapestry of dark fruit—dried figs, plums, and raisins—woven into a rich, bready-toasty malt base heavy with dark caramel. The year-long rest in oak imparts sophisticated nuances of smooth vanilla, toasted coconut, and a whisper of charred wood. Subtle spicy yeast phenols of black pepper dance against the warming presence of its significant strength, while the barrel integration provides a velvety depth that lingers long after a moderately dry, spirit-tinged finish.
Appearance. Deep coppery-brown with brilliant garnet highlights (SRM 20). Crowned by a huge, dense, moussy, and persistent light tan-colored head that leaves intricate lacing.
Aroma. High intensity and deeply complex. A rich malt base of dark caramel and toasted bread is layered with strong esters of raisins, plums, and dried cherries. Significant Heaven Hill barrel influence adds vanilla, coconut, and a refined bourbon character, accompanied by moderate spicy black pepper phenols and a soft, perfumy alcohol warmth.
Taste. An initial impression of rich, malty sweetness featuring molasses and toasted grain. Mouthfeel. Medium-full body with a creamy, luxurious texture. Carbonation is moderate to high, maintaining a lively but smooth feel. Significant alcohol warmth is present but exceptionally well-integrated, lacking any harsh or solvent-like edges.
