El año 2006 tuve una experiencia inusual. El impuesto sobre la malta que tenia que pagar en mi fabrica de Corea era del 267 % y no tuve mas remedio que empezar a utilizar pequennos porcentajes de cebada cruda para poder ser competitivo. Los libros dicen que no se puede utilizar mas de un 10 % del total. Empece por esta cantidad y fui aumentando el porcentaje poco a poco hasta llegar al 92%. Si se cambia el proceso se puede usar cebada cruda perfectamenteEl hecho de que digan que no se puede usar mas del 10% se debe a que siguiendo el metodo tradicional se alarga el tiempo del macerado y se complica el filtrado hasta el punto que es imposible filtrar debido al alto nivel de gomas viscosas que contiene el mosto (beta glucanos). Estas gomas mejoran potencialmente el aspecto cremoso de la espuma y evitan la nucleacion rapida de las burbujas de CO2.
