St. Tropez captures a classic West Coast soul with a focused, assertive hop profile. Intense resinous and dank notes from Simcoe lead the charge, layered over the bright, ruby-grapefruit citrus of Cascade. Despite its sessionable ABV, this American IPA delivers the high-impact bitterness expected of the style, backed by a lean, cracker-like malt structure that stays out of the way. The double dry-hopping process amplifies the forest-floor aromatics and piney depth, resulting in a crisp, refreshing profile that balances old-school intensity with a bright, summery drinkability. It finishes bone-dry with a lingering, clean citrus zest.
Appearance. Medium gold with brilliant clarity. Pours with a moderate, persistent white head that leaves distinct lacing on the glass.
Aroma. High intensity hop aroma featuring prominent resin, pine needle, and a heavy damp-earth dankness. Secondary notes of grapefruit peel and floral citrus emerge. Malt is low and clean, reminiscent of fresh crackers.
Taste. The initial impression is sharply hop-forward, dominated by resinous Simcoe and zesty Cascade flavors. Bitterness is firm and assertive, lasting well into the finish. A neutral, grainy malt backbone provides just enough support without adding sweetness. The fermentation is clean, leading to a very dry, crisp aftertaste with lingering pine.
