When sipped, the woody and fresh notes of cypress combine wonderfully with delicate resinous touches and a hint of umami. The finish is vaguely herbaceous, bitter and acidic.

W ustach drzewne i świeże tony cyprysu pięknie łączą się z lekkimi nutami żywicznymi, pikantnymi i umami, kończąc z lekko ziołowym, gorzkim i kwaśnym finiszem.
Pod koniec Expo 2015 Teo otrzymuje w prezencie beczkę, która w japońskim pawilonie reprezentowała tradycję mistrzów budowy beczek fermentacyjnych, w szczególności do produkcji sosu sojowego. Stąd pomysł Xyauyù starzonego w drogocennej beczce zwanej Kioke. Kioke jest bez zamknięcia, wyprodukowany w Japonii na wyspie Shodo przez Yasuo Yamamoto (Yamaroku Shoyu).
Z tego wszystkiego rodzi się więc piwo, które łączy dwie wielkie tradycje rzemieślnicze związane ze światem fermentacji. Xyauyù, już sfermentowane i dojrzewające przez ponad 18 miesięcy, starzone jest na wolnym powietrzu w nowej beczce Kioke (w której soja nie była fermentowana), co nadaje mu delikatnych nut żywicznych i lekko kwasowych, tworząc unikalny profil aromatyczny. jest oryginalny.
Produkcja beczek Kioke znika w Japonii (zastąpiona przez fermentory ze stali nierdzewnej) i aby podtrzymać tradycję, Yasuo Yamamoto, ostatni przedstawiciel rodziny producentów sosu sojowego, postanowił rozpocząć ich produkcję w swoim laboratorium z „zamiarem podnosić świadomość wśród kolegów i bednarzy. Piwo chce być wehikułem dzielenia się tym tematem, wypełniając fundamentalne zadanie produktu rzemieślniczego: opowiadanie poprzez emocje i dzielenie się.
