La Cim d'Ix is a vibrant White IPA that masterfully balances the refreshing qualities of a Belgian wheat beer with the assertive profile of a Specialty IPA. A grainy wheat malt base provides a soft, bready foundation for the powerful citrusy hops, which deliver bright notes of lemon and grapefruit. The addition of chrysanthemum introduces a unique layer of herbal and floral complexity that lingers into the dry, crisp finish. At 5.2% ABV, this beer offers high drinkability, characterized by its effervescent carbonation and a firm bitterness that highlights its citrus-forward character.

Appearance. Pale straw to light gold (SRM 3-5). Characteristic haze from the wheat and yeast, resulting in a translucent to opaque appearance. Topped by a large, white, dense, frothy head with excellent persistence and fine lacing.

Aroma. High intensity hop aroma featuring prominent citrus notes of lemon zest and grapefruit. A background of bready, grainy wheat malt is present, along with light fruity esters of orange and a hint of spicy coriander-like phenols. The unique inclusion of chrysanthemum adds a subtle, pleasant herbal and floral complexity.

Taste. Assertive citrus hop flavors of lemon and grapefruit lead the palate, followed by a soft, bready wheat malt profile. Bitterness is moderate to high but remains smooth, never harsh. Fermentation character provides light spicy and fruity notes that integrate with the herbal chrysanthemum. The finish is dry and crisp with a lingering citrusy and floral aftertaste.

Mouthfeel. Medium-light body with a smooth, creamy texture from the wheat. High carbonation provides a refreshing, effervescent sting. Very low alcohol warmth, consistent with its 5.2% ABV.
