Pressed Mechanically is a decadent Wild Specialty Beer that bridges the gap between a sharp American Wild Ale and a lush fruit purée. This heavily fruited sour pours with intense saturation, driven by a generous addition of blackberries and sweet cherries that dominate the sensory profile. The aroma is a fragrant blend of jammy dark fruit and the complex, spiced-vanilla notes of tonka beans. On the palate, a crisp lactic acidity is masterfully balanced by the rich, smoothing influence of caramel, creating a pastry-like depth. The result is a vibrant, smoothie-like experience where tart berry flavors meld seamlessly with almond and cinnamon-like nuances.
Appearance. Deep, opaque purple to midnight ruby hue (35+ SRM). Features a dense, creamy, pink-tinted head with moderate retention and significant fruit staining on the glass.
Aroma. High intensity of ripe blackberries and macerated cherries. Distinctive tonka bean presence offers layers of vanilla, toasted almond, and a hint of clove. Very low caramel sweetness and a clean, lactic tartness underpin the fruit, with no hop aroma or funky Brettanomyces phenols.
Taste. Initial impression is a burst of tart blackberry and sweet cherry juice. The mid-palate reveals a rounded sweetness from caramel malts and tonka beans, providing an almond-like complexity. Lactic sourness is firm but balanced, preventing the beer from being cloying. The finish is long and fruit-forward with a clean, acidic snap and zero hop bitterness.
Mouthfeel. Medium-full body with a thick, almost pulpy viscosity from the heavy fruit addition. Carbonation is moderate to low, enhancing the creamy texture. No alcohol warmth is perceived at this ABV; the finish is smooth with no astringency.
