This Wild Specialty Beer is a vibrant, low-alcohol sour defined by its refreshing complexity and striking fruit profile. A bright, zingy Lemon character leads the sensory experience, reminiscent of fresh zest and lemon curd. The addition of exotic Lychee provides a delicate, floral sweetness that balances the sharp acidity, while Dragon Fruit contributes a subtle tropical earthiness and a visually captivating hue. The wild fermentation lends a clean lactic tartness and a whisper of funk, harmonizing with the fruit without overwhelming the palate. It is a light, effervescent expression of a fruit-forward sour, finishing bone-dry and exceptionally crisp.

Appearance. SRM 3–6; pale gold with a distinctive pinkish-purple tint from the dragon fruit. The head is white with a slight rosy hue, featuring moderate to low retention and minimal lacing due to high acidity.

Aroma. High intensity aromatics of freshly squeezed Lemon and citrus zest. Distinctive floral and tropical Lychee notes follow, layered over a clean lactic sourness. Very low crackery malt; no hop aroma; faint earthy dragon fruit and a subtle, wild fermentation funk.

Taste. Initial impression is sharp and refreshing with a dominant lemon tartness. The middle palate reveals juicy, floral lychee and mild dragon fruit sweetness that softens the acidity. Minimal malt flavor, appearing as a thin wafer-like base. Bitterness is negligible, with the balance heavily tilted toward acidity. The finish is very dry, clean, and tart with lingering citrus oils.

Mouthfeel. Light-bodied with a crisp, thin texture. Carbonation is high and prickly, enhancing the perception of acidity. No alcohol warmth is present. Very low astringency from fruit skins and lemon pith.
