High Key Flex is a vibrant Wild Specialty Beer that explodes with a dense, tropical bouquet. The sensory profile is dominated by a lush symphony of Apricot, Mango, and Pineapple, harmonized by the rounding sweetness of Pear and Banana. Distinctive notes of Coconut and Vanilla provide a creamy, almost dessert-like layering against the sharp, lactic acidity of the wild fermentation. Peach esters bridge the gap between the stone fruit and the underlying funk. It is a complex, multi-layered experience where the aggressive fruit additions are balanced by a clean, tart finish and a subtle, rustic fermentation character.

Appearance. Deep golden to hazy apricot-orange (SRM 6-9); opaque with a thick, fine-beaded white head that shows moderate to poor retention, typical of fruited sours.

Aroma. High intensity aromatics of sun-ripened Mango and Pineapple, followed by creamy Coconut and a touch of Vanilla. Stone fruit notes of Apricot and Peach are prominent, backed by a light lactic tartness and very subtle earthy fermentation notes.

Taste. Initial bracing acidity carrying flavors of Pineapple and tart Apricot. The mid-palate transitions to a smoother profile of Pear and Banana, enriched by the rich, oily character of Coconut. Vanilla provides a softening effect to the finish, which is crisp and lingering with tropical fruit skins. Hop bitterness is negligible, allowing the fruit and fermentation acidity to define the balance.

Mouthfeel. Medium body with a slight silken creaminess from the coconut and vanilla. Moderate carbonation provides a refreshing prickle that cuts through the fruit density. Very low astringency despite the heavy fruit load.
