Belafonte Brewing Co. Mondo Bongo
This modern interpretation of a German Pils delivers a luminous, limpid character that bridges continental tradition with New World hop intensity. By employing a clean lager fermentation, the brewery allows the intricate profiles of Columbus, Ekuanot, and Mosaic to shine against a crisp malt backdrop. Expect a dynamic aromatic display of bright citrus and tropical papaya, underscored by a subtle, savory hint of green pepper. The experience is remarkably fresh, maintaining the high drinkability of a classic lager while providing the punchy fruit-forward complexity of a modern IPA, culminating in a dry, refreshing finish with a delicate green bitterness.
Appearance. Straw to pale gold (2–4 SRM). Brilliant clarity with a luminous glow. Features a dense, creamy, long-lasting white head with excellent lacing.
Aroma. Moderate to high hop intensity featuring vibrant citrus, papaya, and a distinctive herbal green pepper note. Supporting this is a low, clean, grainy-sweet and doughy malt presence. Fermentation character is very clean with no detectable esters.
Taste. Initial light crackery malt sweetness is quickly eclipsed by dominant hop flavors of grapefruit, resin, and tropical fruit. Medium-high hop bitterness is firm and slightly resinous, leading into a very dry, crisp finish. The aftertaste is clean, featuring lingering citrus zest and a pleasant minerally snap.
Mouthfeel. Medium-light body with a prickly, high carbonation that enhances the crisp finish. Smooth, clean mouthfeel with no alcohol warmth and a light, refreshing astringency from the hops.
