Bastogne Pale Ale is a rustic Belgian Pale Ale that marries the traditional use of spelt with a modern aromatic hop profile. This blonde ale offers a distinctively Ardennais character, characterized by a bready and slightly nutty grain foundation from the spelt, which adds a subtle, hearty texture to the palate. The aroma is a harmonious blend of spicy yeast phenols and orchard fruit esters like pear and orange, layered over floral hop notes. On the palate, a firm but balanced bitterness provides a clean finish, keeping the malt sweetness in check and ensuring a refreshing, well-integrated drinking experience.
Appearance. Deep gold to light amber (8–10 SRM). Brilliant clarity with a dense, creamy, rocky white head that shows excellent retention and fine lacing.
Aroma. Moderate intensity featuring bready and biscuity malt with a distinct nutty quality from the spelt. Moderate fruity esters of pear and orange are complemented by low floral and spicy hop notes and a subtle hint of peppery yeast.
Taste. Initial soft, bready malt sweetness transitions into a nutty, grainy palate. Moderate fruitiness of apple and orange zest is present. Moderate bitterness provides balance against the malt, leading to a dry, clean finish with lingering herbal hop flavors and a faint peppery phenolic character.
Mouthfeel. Medium-light body with a smooth, slightly rustic texture from the grain. High carbonation provides a crisp, effervescent mouthfeel. Very low alcohol warmth.
