This Wild Specialty Beer presents a playful, decadent sensory profile reminiscent of a forest-fruit lollipop. The experience is dominated by an intense, jammy medley of Strawberry and Raspberry, sharpened by the bright acidity of Sour Cherry. These tart fruit notes are expertly tempered by the pillow-soft sweetness of Marshmallow and the addition of Lactose, which creates a velvety, dessert-like harmony. The result is a modern 'pastry sour' that balances a clean lactic tang against a sugary, confectionary backbone, delivering a vibrant and nostalgic profile where the fruit remains the undisputed protagonist from the first sniff to the creamy finish.

Appearance. Intense, deep ruby-red to magenta; features a frothy, pink-tinted head with moderate retention and light lacing. The beer is opaque and hazy, showing a heavy saturation of fruit solids.

Aroma. High intensity of jammy red fruits, specifically ripe strawberry and raspberry coulis. A secondary layer of sharp sour cherry tang is present, complemented by a distinct, sugary marshmallow and vanilla sweetness. Clean lactic acidity is moderate; hop aroma and malt character are not perceived.

Taste. Initial impression is a burst of tart red berries followed by a mid-palate of sour cherry. The sharp acidity is quickly balanced by a rich marshmallow and lactose sweetness, creating a candy-like 'lollipop' flavor. Bitterness is not perceived. The fermentation is clean and lactic, leading to a lingering, sweet-and-tangy finish of fruit preserves.

Mouthfeel. Medium-full body with a notable creaminess and coating texture from the lactose and marshmallow. Carbonation is moderate. Alcohol warmth is very low and well-hidden. Smooth, with no grain or fruit skin astringency.
