This celebratory Double IPA honors Basque gastronomy with a massive 25g/L dry-hop load of Citra, Strata, Vista, and Vic Secret. The sensory experience is dominated by an intense tropical profile, where the Pomona yeast amplifies vivid notes of passion fruit, guava, and ripe pineapple. On the palate, the robust malt backbone supports flavors of papaya and zesty lime, transitioning into a distinctive resinous dankness. Despite its 8% strength, the finish is remarkably dry and clean, characteristic of a well-crafted Double IPA. The interplay between the modern hop quartet and the stone-fruit-forward yeast esters creates a complex, lingering bitterness that remains smooth and refined.
Appearance. Gold to light orange-copper (SRM 6-9). Large, persistent off-white head with excellent lacing. Generally clear, though a slight haze from the heavy dry-hop load is present.
Aroma. High intensity featuring a vibrant burst of tropical fruits including passion fruit, guava, and pineapple. Distinctive resinous and dank hop character follows. Low, clean, neutral maltiness provides a supportive background, while Pomona yeast adds moderate fruity esters.
Taste. Strong, complex hop flavors of pineapple, papaya, and lime. High hop bitterness that is firm but smooth, never harsh. Malt character is low and clean, allowing for a very dry finish. The aftertaste is long and hoppy, highlighting a persistent resinous quality.
Mouthfeel. Medium-full body with a smooth, robust texture. Medium-high carbonation. Restrained, well-integrated alcohol warmth is present without being solventy. No hop-derived astringency.
