Baron Brewing’s Lion Tamer is a decadently structured Imperial Stout that commands attention with its massive, velvety presence. At a potent 10% ABV, it leads with deep layers of bittersweet chocolate and aromatic vanilla, softened by the creamy, unfermentable sweetness of lactose. The sensory profile is defined by a dense, chewy malt base suggesting espresso and toasted cocoa, while the adjunct additions elevate it into a luxurious dessert-like experience. Subtle dark fruit esters of prune and raisin provide a sophisticated backdrop to the primary roast character, resulting in a harmonious, warming finish that balances bold bitterness with a lush, lingering sweetness.

Appearance. Jet black and fully opaque (SRM 40+). It pours with a thick, dark tan to mocha-colored head that exhibits moderate retention and leaves significant oily legs on the glass wall, indicative of its high viscosity.

Aroma. High intensity. Dominant aromas of rich chocolate and fragrant vanilla beans merge with a deeply roasted malt profile of espresso and charred grain. Subtle secondary notes of black cherry and plum esters are present. The lactose adds a faint milky sweetness, while hop aroma is negligible, and alcohol provides a clean, smooth warmth.

Taste. The initial impression is intensely rich, driven by the lactose and dark specialty malts. Flavors of milk chocolate, fudge, and vanilla dominate the mid-palate, supported by a firm roasted malt bitterness. Malt complexity includes notes of molasses and toasted bread. The finish is long and warming, with a lingering bittersweet cocoa and light char aftertaste that avoids being cloying.

Mouthfeel. Very full-bodied and viscous with a chewy, luscious texture. Carbonation is low to moderate, enhancing the creamy mouthfeel provided by the lactose. A noticeable, smooth alcohol warmth is present but remains well-integrated and velvety.
