Baird Suruga Bay
Suruga Bay is a masterfully crafted Double IPA that mirrors the profound depth of its namesake Japanese bay. Defined by an aggressive use of American hops, this beer undergoes a rigorous double dry-hopping process with whole flower cones, yielding a massive aromatic profile of resinous pine and bright citrus. Despite its 7.5% strength, it maintains exceptional drinkability through a dry finish and a natural carbonation process known as krausening. The sensory experience is dominated by impactful bitterness and a clean, supportive malt backbone that stays out of the way, allowing the complex, resinous hop character to shine with clarity and balance.
Appearance. Pours a brilliant gold to light orange-copper with a moderate-sized, persistent off-white head that leaves delicate lacing on the glass.
Aroma. Intense hop-forward bouquet featuring bold notes of resinous pine, grapefruit zest, and a hint of tropical fruit. Background malt is clean and neutral, offering a faint bready sweetness alongside a very light, well-integrated alcohol presence.
