Apex Brewing Company

Hellion Double IPA is a high-impact powerhouse showcasing a complex blend of Sultana, Cashmere, Amarillo, Galaxy, and Idaho-7 hops. The sensory profile is defined by an explosion of pineapple, ripe melon, and citrus zest, anchored by the subtle pine and spice of the New World hop profile. A substantial malt base featuring extra pale Maris Otter, wheat, and spelt provides a soft, pillowy texture and a light grainy sweetness, while flaked torrefied oats enhance the creamy mouthfeel. Despite its 8% ABV, the beer remains exceptionally drinkable with a clean, smooth finish and a firm but well-integrated bitterness that balances the lush tropical fruit character.

Appearance. Pours a hazy, light orange-gold (SRM 7) with a large, persistent, creamy white head that leaves dense, sticky lacing on the glass.

Aroma. Intense hop aroma featuring prominent notes of pineapple, stone fruit, and citrus zest. Secondary aromas of passionfruit and melon are supported by a clean, grainy, and slightly bready malt character from the wheat and Maris Otter base. Esters are low to moderate, suggesting light peach.

Taste. High hop flavor intensity with layers of mango, orange peel, and resinous pine. A soft, supportive malt sweetness provides balance, characterized by grainy wheat and a hint of nuttiness. Bitterness is moderately high but smooth, lacking any harshness. The finish is medium-dry with a lingering tropical fruit and hop resin aftertaste.

Mouthfeel. Medium-full body with a silky, pillowy texture derived from the spelt and oats. Carbonation is moderate. A light, smooth alcohol warmth is present but well-integrated, with no hop-derived astringency.
