Amnesia Aphophis is a formidable Imperial Stout that leverages a double-maceration process to achieve a massive structural foundation. A complex blend of six different malts creates a tapestry of bittersweet chocolate, scorched caramel, and toasted grain. This base is defined by the infusion of Chiapas espresso, which imparts deep, earthy coffee notes and a sophisticated roastiness that integrates seamlessly with the firm hop presence. The beer pours with a velvet-like density, offering a rich interplay between dark fruit esters and a lingering, roasty bitterness. The result is a bold, sophisticated experience where the Chiapas coffee elevates the traditional dark malt character.
Appearance. Jet black and completely opaque (35-40 SRM). Features a thick, persistent, deep tan to mocha-colored head with excellent retention and significant lacing. High viscosity is apparent in the glass.
Aroma. High intensity with a dominant profile of freshly roasted espresso and dark chocolate. The six-malt blend contributes secondary notes of molasses, toasted bread, and black licorice. Low dark fruit esters resembling raisins or prunes are present, alongside a moderate earthy hop character.
Taste. An initial surge of bittersweet cocoa and intense Chiapas coffee gives way to complex malt layers of burnt toast and dark caramel. Hop bitterness is firm and high, providing necessary balance to the rich malt sweetness. The finish is long and drying, characterized by a lingering harmony of roasted grain, espresso, and a subtle alcohol glow.
Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low to moderate, contributing to a creamy sensation. A smooth, noticeable alcohol warmth is present but well-integrated.
