This American IPA offers a unique interplay between classic Pacific Northwest hops and the rustic influence of Italian chestnuts. A vibrant bouquet of citrus and resin stems from the use of Amarillo, Chinook, Citra, and Cascade hops, underpinned by a soft, honey-like maltiness. The addition of chestnuts lends an earthy depth and a structured, velvety mouthfeel that sets it apart from leaner examples of the style. Balanced yet firm, the bitterness builds gradually, leading to a long, harmonious finish where bright citrus notes linger alongside a subtle, nutty richness. It is a complex, elegantly composed tribute to its mountainous origins.

Appearance. Deep gold to light reddish-amber (8–13 SRM). Brilliant clarity with a dense, persistent off-white head that leaves decorative lacing.

Aroma. High intensity. Dominant citrus (grapefruit, orange) and piney resin from Amarillo and Chinook hops, supported by tropical hints from Citra. The malt profile is moderately low but distinct, featuring honeyed sweetness and a unique, earthy, slightly nutty note from the chestnuts. Clean fermentation profile with minimal esters.

Taste. The initial impression is hop-forward but smooth. Bold hop flavors of citrus zest and floral notes from Cascade and Citra are prominent. A supportive malt backbone provides flavors of honey and toasted grain, while the chestnuts add a subtle savory complexity. Bitterness is firm (approx. 50-60 IBU) but integrated, never harsh. The finish is long and dry, with lingering grapefruit peel and a clean, resinous aftertaste.

Mouthfeel. Medium-full body, exhibiting more structure and creaminess than a typical IPA due to the chestnut starch. Carbonation is moderate to medium-high. A gentle, well-integrated alcohol warmth is present. Smooth texture with no detectable astringency.
