Alpha Delta No.1 presents a sophisticated evolution of the Straight Sour Beer style, shaped by an eight-month maturation period with house Brettanomyces and Lactobacillus cultures. This extended aging yields a complex sensory profile where sharp, lemony lactic acidity meets a rustic, earthy funk. Despite its elevated strength, the beer remains exceptionally refreshing, supported by a lean malt backbone that hints at crackery grain. The wild fermentation character introduces notes of dried hay and tart orchard fruit, while the high attenuation ensures a crisp, bone-dry finish. It is a masterful balance of aggressive acidity and nuanced fermentation byproducts, offering a bright yet deep sensory experience.

Appearance. Pale straw to light gold (3 SRM). Effervescent with a large, dense white head that exhibits poor retention due to high acidity. Clarity ranges from clear to a very slight haze.

Aroma. High intensity. A dominant, sharp lactic sourness provides a lemony top note, complemented by a moderate funky character reminiscent of hay and leather from the Brettanomyces. Low crackery malt aroma with moderate esters of apricot and tart green apple. No hop aroma.

Taste. Initial impression is a piercing, clean lactic sourness that remains the focal point. Low bready and grainy malt flavors provide a brief foundation. A moderate funk develops mid-palate, adding complexity without harshness. Bitterness is undetectable. The finish is decidedly dry and crisp, with a lingering citrusy acidity and subtle stone fruit esters in the aftertaste.

Mouthfeel. Medium-light body with high, prickly carbonation. A noticeable but well-integrated alcohol warmth is present, reflecting its higher gravity. Bright, crisp acidity creates a mouth-watering sensation with no perceptible astringency.
