Okapi presents a vibrant fusion of Danish organic cider and wild beer, resulting in a complex Brett Beer that bridges the gap between orchard and brewhouse. The sensory profile is led by the bright, citrusy punch of Citra hops, which intertwine seamlessly with the delicate, perfume-like floral notes of lilac flowers. Fermentation with Brettanomyces imparts a characteristic dryness and evolving funk, ranging from tropical fruit esters to earthy, hay-like nuances. A refreshing acidity derived from the cider component cuts through the turbid, rustic grain profile, leading to a bone-dry finish. Appearance. SRM 3-5, pale straw to light gold. Turbid and hazy clarity. Moderate white head with fair retention and some light lacing.
Aroma. High intensity featuring prominent citrus notes of grapefruit and lime from Citra hops. Secondary aromas of floral lilac and tropical pineapple. A moderate Brett character provides earthy funk, wet hay, and leathery undertones. Malt is low and cracker-like.
Taste. Initial impression is tart and very dry. High fruit character with lemon peel and mango from the Citra hops, complemented by a subtle floral sweetness. Low hop bitterness. Fermentation character is complex, showing spicy Brett esters and a rustic, barnyard depth. Finish is bone-dry and crisp with a lingering citrus and floral aftertaste.
Mouthfeel. Medium-light body with high, effervescent carbonation. Subtle alcohol warmth is present but well-integrated. Very low astringency despite the floral and hop additions; crisp and refreshing.
