This American IPA is a dedicated exploration of Simcoe, utilizing leaf, pellets, and cryo-concentrated hops to deliver a multi-layered aromatic experience. The inclusion of Vienna Malt provides a delicately sweet, toasty foundation that remains clean, allowing the hop profile to dominate. Initial sensory impressions lead with sweet, juicy fruit and bright clementine, characteristic of high-quality Simcoe. As the palate develops, the citrus evolves into a classic resinous pine finish. It strikes a sophisticated balance between modern fruit-forward intensity and the firm, crisp bitterness traditional to the style, resulting in a vibrant and impeccably bright drinking experience.
Appearance. Ranging from deep gold to light amber with a slight, inviting haze. Topped by a persistent, medium-sized white head that leaves delicate lacing on the glass.
Aroma. High intensity hop aroma showcasing Simcoe versatility, featuring prominent notes of clementine, tropical fruit, and a distinct resinous pine. A low, clean malt sweetness from the Vienna Malt provides a subtle, grainy backbone. Fermentation is clean with no significant esters.
