Abbey Monks’ Wit Ale

Abbey Monks’ Wit Ale is a quintessential Witbier that balances a complex yeast profile with a vibrant spice character. The inclusion of Soft Red Wheat and oats provides a creamy, velvety texture that supports a bready malt base. On the nose, traditional Indian coriander and a dual-citrus punch of Spanish sweet and bitter orange peel create a bright, perfumy bouquet. Subtle earthy and spicy notes from Czech Saaz and British Fuggle hops provide depth without overshadowing the fruitiness. It finishes exceptionally clean and dry, offering a refreshing, multi-dimensional experience that honors the medieval gruit-inspired heritage of the style.
Appearance. Very pale straw (2-4 SRM) with a characteristic milky, whitish-yellow cloudiness from starch haze. It features a dense, white, moussy head with excellent retention and delicate lacing.
Aroma. Moderate intensity featuring bready and grainy wheat malt. Prominent perfumy-lemony coriander aromatics are interwoven with zesty, citrusy-orange fruitiness. Low spicy-herbal hop notes from the Saaz and Fuggle are present in the background, complementing the complex, spicy Belgian yeast character.
Taste. Initial impression is of sweet, bready malt with a honey-like quality, quickly followed by zesty orange and lemony spice. The coriander and orange peel provide a refreshing citrus depth. Bitterness is low, allowing the fruit and spice to lead. It transitions into a crisp, dry finish with a lingering herbal-spicy aftertaste.
Mouthfeel. Medium-light body with a notable smoothness and creaminess derived from the flaked wheat and oats. High carbonation provides an effervescent, refreshing tingle. Completely free of astringency or harshness.
