It presents a deep ruby to magenta hue, signaling the prominent use of beetroot. The aroma is a complex tapestry of earthy soil, lemon-pith lactic acidity, and leather-forward Brettanomyces funk. On the palate, the vegetable’s natural sweetness is largely fermented out, leaving a bone-dry, vinous character enhanced by subtle oak tannins from barrel aging. The finish is crisp and highly attenuated, with a lingering interplay of savory spice and tart red fruit notes.
